Adam grew up in Connecticut working in his grandparents’ Chinese restaurant. Autumn is his favorite season there, where he enjoys the colors, smells and feeling of change in the air. He moved to New York City where he lived and worked for ten years. He spent five years working in finance, but decided to make a change and challenge himself in a wholly different context.
He moved to Paris to cook, and trained at the renowned professional hospitality and culinary school, Ecole Ferrandi. Upon completion of the program, he did a stage at Michelin-starred restaurant L’Astrance under Pascal Barbot. Chef Barbot provided him with a myriad of important lessons and insights, not least of which included this (approximately translated) truism: “he who doesn’t work doesn’t make mistakes.”
He loves Paris, as well as its proximity to various European destinations. He speaks English and French (“both need a lot of work!”), and is intellectually inquisitive in all directions.
With Quixotic, which he founded with Josh and Carina, Adam is constantly pushing the team forward with new ideas, and evolving their mission with different ways of thinking and working. As a result, he doesn’t have much leisure time (Days off?!), but it suits him just as well given that he’s endlessly passionate about what he does.
