Established in 2011 in Paris by Carina Soto Velasquez, Joshua Fontaine, Adam Tsou, our mission is to build a creative community based upon a culture of openness and collaboration. Below you will find a timeline of our company’s history.
Quixotic Projects Opens Its First Venue
2011 With a little bit of nervousness and a lot of luck, Quixotic embarks on its first adventure in the Marais. After two months of crazy work Candelaria opens. Three days before the opening, Surface to Air books the venue for their annual party during the Fashion Week.
Candelaria at Cocktail Spirits
2012 Within a year of opening their first venue, Candelaria is one of the four finalist for Worlds Best Cocktail Bar. Adam, Carina and Josh are invited onstage for the first time to present Candelaria: it’s birth, spirit, team, and cocktails.
QP Quickly Follows Up With Glass
2012 A little over a year after successfully opening Candelaria, QP returns with Glass, a pioneering bar in Pigalle modeled after New York bars where Josh and Adam worked a decade earlier. The second day was spent cleaning champagne and footprints off the ceiling.
Quickly Follows with Le Mary Celeste
2013 Just a few months after Glass’ debut, Le Mary Celeste opens its doors with a Brooklyn Brewery event in the presence of head brewer Garrett Oliver. Our little corner of the Marais has been busy ever since.
Le Mary Celeste x Le Fooding
2013 The French food guide “Le Fooding” recognizes our team’s work and awards LMC the title of “Meilleur Bar à Délices 2014”. We celebrated turning this banner into a mezcal luge during the after party.
1st Annual Quixotic Cocktail Circus
2013 During Cocktail Spirits, Paris’ renowned bar convention, we organized an extravaganza of visiting guest bartenders from around the world, offering exceptional cocktails, food and entertainment for our industry friends.
Candelaria #9 in the world
2013 Candelaria breaks the top ten, reaching #9 in the “World’s 50 Best Bars”, the highest showing ever for a French cocktail bar.

Candelaria at Tales of the Cocktail
2014 For the third year in a row, Candelaria is a top-four finalist for “Best International Cocktail Bar” at the spirits industries’ biggest trade event, Tales of the Cocktail, held each year in New Orleans, USA.
2015 After much anticipation, we head into a new arrondissement, the 2nd. Located between the Marais and Pigalle, Hero becomes the bridge between the chic Marais and SoPi.
Candelaria in Mexico City
2015 During the «Tales of the Cocktail on Tour event» in Mexico City, Limantour hosted Candelaria for one special night.
Grand Quixotic Tour
2015 Three locations, three different takeovers. The night started with Tjoget of Stockholm at Le Mary Celeste, then continued on with Trick Dog of San Francisco at Candelaria and finally ended, or began again, with Nomad at Glass.
Hero in Stockholm
2015 Several months after opening, Hero heads to Stockholm to stirs things up with PopUpSTHLM. An exciting menu, rare cocktail concoctions and a sold-out crowd of pleased customers made it a great first experience.
Candelaria in Beijing
2015 Candelaria flies over to China for an invitation from the Shangri-La Hotel to host “A French Reunion in Beijing”. Their Atmosphere bar served as the ideal setting for the presentation of eight original cocktails.
Hero x Le Fooding
2015 Once again, the French food guide “Le Fooding” recognizes our team’s work and awards Hero the title of “Meilleur Frit Style 2015”. Plans of turning this banner into a champagne luge were definitely in order.
Pop-up Hero in Oslo – Himkok
2016 After being crowned “Meilleur Frit Style 2016” by Le Fooding, Hero responded to Himkok’s invitation for a pop-up bar in Oslo. A huge success with customized cocktails, incredible food and satisfied guests !
QP in Athens Bar Awards
2016 Joshua Fontaine and Simon Perich represented Quixotic Projects Group at Absolut Bar Awards 2016 in Athens, in front of more than 300 persons, mostly from the Greek bar industry.
Candelaria in Hong-Kong – Ozone
2016 We had the great honor and pleasure to join Ozone bar in Hong-Kong for a 5 days pop-up bar. Incredible atmosphere and public, and once again a huge success.
After party World’s Best 50 – Glass After Dark – London
2016 On the occasion of the World's Best 50 Bars in London, we had the great pleasure of exporting Glass for a special "Glass After Dark" evening for the event's after party. An incredible event with the collaboration of Maverick Drinks.
A New Adventure
2017 A new challenge for Quixotic Projects in 2017 : the launch of a bar-restaurant inside one of the most famous cultural places in Paris : Le Palais de Tokyo in the heart of the 16th district of Paris. After construction works, Les Grands Verres opened its doors in July 2017.
In the kitchen, American chef Preston Miller proposes his vision of a grand Mediterranean brasserie inspired by his various origins and based on the founding principles of all Quixotic Projects venues: fresh and local products, respect for the seasonality, originality and the desire to have the most limited impact on our environment. The bar explores new sustainable practices, implementing unique solutions to reducing bottle and packaging waste.

2017 Le Mary Celeste reaches the 2017 “Spirited Awards” in the category “Best international Bar Restaurant”.
World’s Best Bar #19
2017 For the fifth consecutive year, Candelaria is part of the "World's 50 best bars", reaching the 19th place.
Les Grands Verres – “Best Decor” 2018 Award by Le Fooding
2017 Six months after opening, Les Grands Verres receives a first distinction: the “best decor” 2018 award by the reference guide Le Fooding! The whole team is very thankful for the recognition after long months of hard work in trying to make LGV a unique place.
